Key Responsibilities/ Duties:
Leadership & Management:
- Oversee the operations of Yellowfin Bar & Kitchen, poolside service, and any other food outlets.
- Lead, mentor, and develop a team of managers, chefs, and service staff to deliver exceptional guest experiences.
- Foster a culture of excellence, teamwork, and continuous improvement.
Operational Excellence:
- Ensure compliance with health, safety, sanitation, and alcohol service regulations.
- Manage inventory control for food, beverage, and supplies to minimize waste and control costs.
- Implement and maintain quality control standards for all food and beverage products.
Financial Performance:
- Develop and manage the department's budget, including forecasting, revenue management, and cost control.
- Analyze financial performance and implement strategies to increase profitability.
- Monitor and review financial performance against budget and forecasts.
Menu & Concept Development:
- Collaborate with the Executive Chef on menu development, ensuring offerings reflect the unique Key West and oceanfront ambiance.
- Drive innovation in menu and service concepts to stay competitive and appeal to diverse guest preferences.
Guest Experience:
- Enhance guest satisfaction by ensuring all F&B operations provide a high-quality, memorable experience.
- Respond to guest feedback and manage service recovery when necessary.
Marketing & Sales:
- Work with the marketing team to promote F&B offerings through special events, promotions, and integration with resort activities.
- Develop strategies to increase local and in-house business.
Event & Banquet Management:
- Oversee all banquet and event functions, ensuring seamless execution.
- Coordinate with sales and events teams for catering and banquet services.
Staff Training & Development:
- Conduct regular training sessions on service standards, product knowledge, and safety procedures.
- Implement performance evaluations and career development plans for F&B staff.
- Perform any other job related duties as assigned.
